Quince and duck sausage pie


Here is an original way to cook quince with this quince and duck sausage tart.

Ingredients for 1 pie:

  • 2 onions
  • 20 g semi-salted butter
  • 3 duck sausages
  • 1 homemade shortcrust pastry
  • 50 g grated Emmental

For the compote:

  • 250 g of apple
  • 250 g of quince
  • 12 cl of water
  • 50 g sugar
  • 20 g butter

Quince and duck sausage tart

For the compote:

- Peel, seed and dice the apples.

- Peel and cut the quince in half. Remove the seeds and the core (very grainy) and dice the quince flesh.

- Pour the fruit into a saucepan with the water and sugar. Cook over medium heat, stirring regularly, until a nice consistency is achieved. Add the butter and set aside.

- Peel and mince the onions. In a frying pan, arrange the butter and cook them with a light coloring.

- In a frying pan, quickly cook the sausages without fat.

Degrease and cut into 1 cm thick sections.

Preheat the oven to 220 ° C (th. 7/8).

- Roll out the dough in a large mold or tartlet molds. Shape the edges, prick the bottom and edges with a fork. Place baking paper, ceramic balls (or beans, etc.) then bake for 20 minutes.

- Spread the compote on the bottom of the tart, arrange the onions and the slices of duck sausage.

- Sprinkle with grated Emmental.

- Bake for 10 minutes until a nice color.

Quince: Preserved in a cool and airy place, quince can easily be stored for several weeks. In the refrigerator, separate it from other foods that it might flavor, and avoid freezing, which it does not tolerate well.
