Brussels sprouts, bacon and grilled chestnuts

Ingredients for 4 persons :

The best season to harvest Brussels sprouts is during the winter, from November to January.

  • 500 g of cabbage from Brussels
  • 4 nice slices of bacon
  • 20 g butter
  • 125 g canned chestnuts
  • 1 l of chicken stock
  • Salt pepper

Brussels sprouts, bacon and grilled chestnuts recipe

This recipe can be done in 2 steps, first cooking the Brussels sprouts, then cooking the bacon and chestnuts.

  • Start by washing the Brussels sprouts well
  • Boil the poultry broth
  • Then plunge the Brussels sprouts into the broth
  • Leave to cook for 15 minutes over low heat, the cabbages must remain firm
  • Once cooked, drain and keep warm
  • Meanwhile, cut the bacon into strips
  • Drain the chestnuts
  • Melt butter in a pan
  • Brown the chestnuts in the butter until they are caramelized
  • Add the bacon for a few moments to grill it
  • Serve the Brussels sprouts in a deep plate accompanied by a few grilled chestnuts and bacon
  • You can pour a few tablespoons of chicken stock as a sauce

An alternative is to replace the bacon with bacon and sauté the Brussels sprouts at the end with chestnuts and bacon.
