The best season to harvest Brussels sprouts is during the winter, from November to January.
- 500 g of cabbage from Brussels
- 4 nice slices of bacon
- 20 g butter
- 125 g canned chestnuts
- 1 l of chicken stock
- Salt pepper

Brussels sprouts, bacon and grilled chestnuts recipe
This recipe can be done in 2 steps, first cooking the Brussels sprouts, then cooking the bacon and chestnuts.
- Start by washing the Brussels sprouts well
- Boil the poultry broth
- Then plunge the Brussels sprouts into the broth
- Leave to cook for 15 minutes over low heat, the cabbages must remain firm
- Once cooked, drain and keep warm
- Meanwhile, cut the bacon into strips
- Drain the chestnuts
- Melt butter in a pan
- Brown the chestnuts in the butter until they are caramelized
- Add the bacon for a few moments to grill it
- Serve the Brussels sprouts in a deep plate accompanied by a few grilled chestnuts and bacon
- You can pour a few tablespoons of chicken stock as a sauce
An alternative is to replace the bacon with bacon and sauté the Brussels sprouts at the end with chestnuts and bacon.
