Raw endive with duck and cream cheese


As an aperitif as an appetizer or as a starter, these endives with duck and fromage frais are both fresh and delicious!

Ingredients for 4 persons :

  • 3 endives
  • 1 spreadable fresh cheese (St MorĂȘt style)
  • 1 duck leg confit
  • 1 shallot
  • 5 cl of liquid cream
  • A few pink berries
  • Salt

Endives with duck and cream cheese

> Remove the core from the endives. Remove the leaves and wash them. Wipe them off on absorbent paper.

> Run the duck leg under hot water to degrease it, dry it well. Place it in a bowl and pull it apart with a fork. Add the cream cheese, pepper (and add liquid cream if necessary).

> Peel, wash and finely chop the shallot. Add it to the previous preparation.
Salt if necessary.

> Gently divide the contents of the salad bowl in the hollow part of the endive leaves. Sprinkle with crushed pink berries and serve immediately.
