Banana cream with speculoos


Ideal in a glass for a fresh and crispy dessert, this recipe for banana cream with speculoos will delight young and old.

Ingredients for 4 persons :

  • 3 ripe bananas
  • 1 tsp. lemon juice
  • 30 g cane sugar
  • 6 little Swiss
  • 8 cl of liquid cream
  • 4 speculoos

Banana cream with speculoos

- In a salad bowl, mash the bananas with a fork. Add the lemon juice and cane sugar, mix well. Add the biscuits and the liquid cream, mix again.

- Arrange in verrines and refrigerate until ready to serve (about 2 hours).

- When ready to serve, add the previously crushed speculoos.

Chef's B.A.ba:

Instead of speculoos, you can add salted butter caramel and crushed Breton pucks. In this case, remove the cane sugar from the recipe.
