Verrine of prawns


As easy as they are quick to make, these prawn verrines will be unanimous for a fresh and colorful aperitif.

Ingredients for 4 persons :

  • 1 grapefruit
  • 12 prawns, cooked and peeled
  • 4 strands of chive

For the cocktail sauce:

  • 4 plain Swiss cookies,
  • 1 lemon,
  • 1 tbsp. mustard,
  • 2 tbsp. ketchup,
  • 1 pinch of Espelette pepper,
  • 1 tbsp. a coffee of whiskey,
  • Salt, freshly ground pepper

Prepare the sauce:

In a salad bowl,

  • Combine the small Swiss, lemon juice, mustard, ketchup, chilli and whiskey.
  • Salt and pepper. Reserve.

Peel the grapefruit raw.

  • Cut the grapefruit slices and diced prawns.
  • In the verrines, place the diced grapefruit, the sauce and pieces of prawns.
  • Finish with the chopped chives.

Place in the refrigerator at least 1 hour before tasting.

Serve chilled.
