Cream of cauliflower with mussels


In the fall it is the season for mussels and cauliflower so indulge yourself with this recipe for cauliflower cream with mussels

Ingredients for 4 persons :

For the cauliflower cream:

  • 500 g of cauliflower
  • 40 cl of chicken broth
  • 3 tbsp. heavy cream
  • coarse salt, salt, freshly ground pepper

For the marinated mussels:

  • 250 g bouchot mussels
  • 1 shallot
  • 25 g semi-salted butter
  • 5 cl of dry white wine
  • Salt, freshly ground pepper
  • 4 branches of parsley
  • 4 pinches of curry

Cauliflower cream recipe with mussels

For the cauliflower cream:

  • Wash the cauliflower. Detail it in bouquets.
  • Place the bouquets in boiling salted water with coarse salt.
  • Cook for 15 to 20 minutes. Remove, drain.
  • Mix the cooked cabbage with the chicken stock and the cream.
  • Bring to a boil for 2 minutes. Season.
  • Pour into a saucepan.

For the marinated mussels:

  • Scrape and wash the mussels.
  • Peel and finely chop the shallot.
  • In a large saucepan, melt the butter. Sweat the shallot.
  • Pour in the white wine. Salt and pepper.
  • Bring to the boil for a few minutes then throw in the mussels. Mix.
  • Remove from the heat as soon as all the mussels are open.
  • Wash, remove the leaves from the parsley.
  • Heat the cauliflower cream.
  • Shell the mussels (keep a few in shells for decoration).

In hollow plates previously heated,

  • Pour 2 ladles of very hot cauliflower cream.
  • Arrange a few mussels harmoniously, garnish with a shell mussel and a few parsley leaves.
  • Sprinkle with a pinch of curry.

To cut the cauliflower, cut the heel with a paring knife at the base of the leaves. Remove the sheets then detail them
bouquets.

If you have a few more bouquets left, offer them raw as an aperitif alongside other raw vegetables and
sauces, in the form of dips.

Grated on a plate, cauliflower brings crunch to a dish.

For an exotic touch, this cauliflower cream can be flavored with curry or paprika.
