Carrot and dried fruit cake


Here is a delicious dessert made from carrots and dried fruits, easy and quick to make and terribly delicious.

Ingredients for 4 persons.

For the syrup:

  • 150 g sugar
  • 200 g of water
  • 6 dried figs
  • 6 prunes.

For the cake:

  • 300 g of carrots
  • 3 eggs
  • 150 g brown sugar
  • 80 g flour
  • 50 g cornstarch
  • 1 sachet of baking powder
  • 50 g melted butter
  • 20 g olive oil
  • Vanilla (pod or extract)
  • 1 handful of slivered almonds.

> Prepare the syrup by boiling the sugar and water.

> Add the dried fruits and let them swell for 2 hours.

Preheat the oven to 170 ° C (th 5/6).

> Cook the carrots in 1 L of water for 30 min, mash them with a potato masher.

> Mix the flour, cornstarch, salt, baking powder and sugar, add the eggs and whisk everything together.

> Stir in the crushed carrots, olive oil, melted butter and vanilla.

> Mix and pour into a mold.

> Place the dried fruits on the dough, pushing them in slightly. Sprinkle with slivered almonds.

> Bake for 40 min at 170 ° C.
