Turkey supreme: exceptional!


Turkey Supreme is a very fine and tasty way to cook turkey.

Ingredients for 4 persons :

> 4 turkey supremes
> 40 g of butter
> Salt, freshly ground pepper

For the stuffing:

> 3 slices of sandwich bread
> 15 cl of cream
> 4 shallots
> 5 dates
> 6 dried apricots
> 4 figs dry
> 80 g of chicken livers
> 150 g of sausage meat
> 150 g of ground veal shoulder
> 1 pinch of allspices
> 3 eggs
> 80 g of raisins
> 2 tbsp. tablespoon flour
> the zest of ½ orange
> Salt, freshly ground pepper

Turkey supreme recipe

Prepare the stuffing:

- Remove the crust from the slices of bread and keep the crumb. In a salad bowl, pour the cream and arrange the bread crumbs in pieces. Leave to rest for 30 minutes.

- Peel and chop the shallots.

- Cut the dates, apricots, figs and chicken livers into small pieces.

- In a salad bowl, pour the sausage meat, chicken livers, veal shoulder, add the drained bread, spices, eggs, dried fruits, orange zest, shallots, flour and season at your convenience. Mix well and adjust the seasoning if necessary.

- Flatten the turkey supremes on a work surface, spread a little stuffing in their center and roll (like a paupiette). Hold with a wooden spike.

Preheat the oven to 180 ° C (th. 6).

- In a frying pan, melt the butter, brown the supremes in it until light browning appears. Transfer them to a dish in the oven, pour 10 cl of water, cover, put in the oven and cook for 20 to 25 minutes.

- Remove from the oven, then cut the supremes into three or four pieces.

Arrange the turkey supremes on a plate, sprinkle with the cooking juices.
