County potato soup


A classic among winter soups, Comté potato soup is rich and delicious.

Ingredients for 4 persons :

  • 250 g of potatoes floury flesh
  • 1 onion
  • 1 white leek
  • 1 white celery
  • 80 g of Comté
  • 6 dl of meat broth
  • 1.5 dl fresh cream
  • 20 g butter
  • 4 tbsp. tablespoon nut oil
  • Salt and pepper.

Peel the potatoes, cut the onion and leek into rings and chop the celery.

> Brown everything in a little butter.

> Drizzle with stock and bring to the boil.

> Add the potatoes in pieces, cook for 40 min.

> Whip the cream until it is firm.

> Add the cheese to the soup, keeping some for garnish.

> Mix the soup. Pass it through a sieve and season it.

Add the cream and serve with a little walnut oil and the remaining cheese.
