Tomato tatin: stunning!


You like the concept of vegetable tarte tatin and you love candied tomatoes, then here is a recipe as original as it is delicious, the tomato tatin.

Ingredients for 4 persons :

  • 1 puff pastry
  • 4 to 5 beautiful tomatoes (beef heart or bunch type)
  • 1 or 2 onions (depending on size)
  • 25g butter
  • 3 tbsp of olive oil
  • 2 tbsp of balsamic vinegar
  • 1 tbsp caster sugar

Tomato tatin recipe

The success of the tomato tatin lies above all in the cooking of the tomatoes because this tart is best when the tomatoes are lightly candied.

  • Start by washing the tomatoes
  • Cut the tomatoes in half
  • Peel then finely chop the onion
  • Melt the butter with the olive oil in a large pan
  • Gently sauté the onions until lightly browned
  • Place the tomato halves on top and pour the balsamic vinegar
  • Cover and cook for 15 minutes over low heat

Meanwhile,

  • Preheat the oven to 180 °
  • Butter a pie dish
  • At the bottom of the dish, arrange the tomato halves so as to cover the entire surface by overlapping them slightly (skin side down to the bottom of the dish)
  • Then sprinkle with the sugar
  • Add the onions
  • Pour in the cooking juice
  • Cover everything with the puff pastry
  • Bake for 30 minutes at 180 °
  • Unmould and serve immediately
