Carrot gratin with quinoa


Here is a delicious quinoa carrot gratin recipe, as easy as it is quick to make.

Ingredients for 4 persons :

  • 50 g of quinoa
  • 20 g of parmesan
  • 1/2 thick slice of braised ham
  • Coarse salt

Carrot puree

  • 350 g of carrots
  • 10 cl of milk
  • 30g butter
  • Salt pepper

Quinoa carrot purée gratin

For the carrot puree:

- Peel, wash and cut the carrots into pieces. Place them in a pot of salted water with coarse salt until tender.

- Pass them through a vegetable mill, incorporate the milk and butter. Season. Mix well.

- Bring a pot of salted water in coarse salt to a boil, immerse the previously washed quinoa in a colander. Cook for 15 minutes. Drain then set aside.

Preheat the oven to 210 ° C (th.7).

- Cut the braised ham into long sticks.

- Grate the Parmesan, mix it with the quinoa.

- In small individual dishes, place and spread a layer of carrot puree. Cover with the quinoa and Parmesan mixture. Insert and distribute the braised ham sticks.

- Bake and cook 8 to 10 minutes so as to brown the surface of the gratin.

- This very sweet recipe will be perfect for children, it will have the advantage of making them discover or rediscover quinoa.

- For adults, you can incorporate some cumin seeds.

- Quinoa is appreciated for its high protein content. It does not belong to the grass family as one might think, but to the beet and spinach family. It is becoming more democratic, it can be found today in many supermarkets, but it is above all a flagship product of organic farming and fair trade. Above all, before cooking, quinoa should be washed well.
